OK, allioli is from Catalunya, and the real authentic one is made with ONLY garlic and olive oil, virgin, cold press. I've never made one this way; it's really hard. To make it easy, we add an egg yolk (raw, unpasteurized, so you need them to be fresh and organic, if possible).

It's made by hand, in a mortar and one mashes the garlic into paste. Only when garlic is pasty, the yolk is added, and then the oil, little by little. I like it with a pinch of salt.

Mayonnaise, on the other hand, it can be done in the food processor or mixer, it's not done with olive oil, but sunflower, has no garlic and it has the entire egg and lemon.

One day I'll make a video of allioli. It's yummy!

Oh, the vinegar - I'm still laughing. I'll have to tell my mom about this one .. I have a giant bottle (1 or 1.5 gallons?) of apple cider vinegar (by her recommendation) for cleaning, cooking, sore throats etc... and it never fails to develop those goobers. Glad to see I'm not alone. :)

The last part of this really made me chuckle. My three year old son enjoys watching food52 videos with me. Recently he has developed a new bath time game in which he pretends to be Amanda and his older sister is Merrill. Inevitable the game ends with Amanda dousing Merrill.

This made me laugh so hard -- as my husband pointed out, your son is right on. Merrill is the oldest child in her family (responsible) and I am the youngest child in mine (misbehaved).
