Gluten-Free Rhubarb, Lemon and Almond Cake  Coconut Butter Cookies

I've been working on a gluten free pie dough. Not happy with it yet, but would love if someone else has found one.

This is my version of gluten free girl's recipe. I use it all the time. I also have another version that works best for hand pies.

Makes 1 crust

60g tapioca starch
20g potato flour
50g millet flour
45g sweet rice flour
1 tsp Psyllium husk
1/4 tsp Sea salt
1 stick butter or 85g shortening
1/4 cup cold water

You can use a food processor to cut in the fat. It won't get tough because there no gluten. So much easier!

Before I was diagnosed Celiac, I was a big pie maker. I always used a food processor, makes it so much easier especially when you are doing multiple pies.

Fun, fun....I will make the GF Oatmeal Lace Cookies, too. Going out of town and, in order to get you the tasting notes on time, this is the only recipe I have all the ingredients for. Thanks:-)
