A 15-Minute Cheesy Chicken Dinner to Eat Every Night of the Week

When it comes to dinner, we have a need for speed. Thankfully, Tiffany King, a popular food blogger and family meal-planning wizard, knows exactly how to get dinner on the table lickety-split. In her debut cookbook, Eat at Home Tonight, she shares easy, satisfying dinners that don’t break the bank, like these cheesy chicken Florentine quesadillas.

We all have evenings that are so busy that we can’t carve out more than 15 minutes for making dinner. It’s tempting to hit the drive-through on nights like that, but you don’t have to! If you keep a couple of key ingredients in your kitchen, you’ll have the makings of quick quesadillas that will have your family raving.

This meal is so versatile, you can make nearly anything into a filling. It’s also perfect if you’ve got picky eaters, because each person can customize their own quesadilla.

You will need tortillas in any size or variety and your choice of cheese. Everything else is open to your imagination and the contents of your pantry and refrigerator.

The prep is simple too. Heat a griddle or skillet over medium heat with a small amount of oil. Place the tortilla in the skillet and layer your chosen ingredients over the top. For large tortillas, only cover half of the tortilla with ingredients and then fold the other half over to make a half-moon shape. For small tortillas, cover the whole tortilla with ingredients and top with a second tortilla. Cook on both sides until toasty brown and serve.

Classic Tex-Mex quesadillas can be made by adding any of the following: black beans or kidney beans, cooked chicken (rotisserie chicken makes it fast), ground beef, corn, rice and cheddar cheese. Season with chili powder and cumin.

Give your quesadilla a pizza spin by layering any combination of pepperoni, sausage, onions, bell peppers, pizza sauce and mozzarella cheese.

Go for breakfast quesadillas with scrambled eggs, ham, and bell peppers with cheddar or Swiss cheese.

Make Cuban sandwich-inspired quesadillas by spreading a flour tortilla with mustard and layering ham, pickles and Swiss cheese.
