A grad student living in Pittsburgh, Michael Hoffman is also an intrepid cook and food blogger. In his headnote for Braised Berkshire Bacon with Pickled Onions, he recounts how he and a friend cured an entire pork belly and then smoked most of it to make their own bacon. His recipe for Ofra's Spicy Fried Eggplant was inspired by a childhood memory of a dish made by an Israeli neighbor, and he makes a homemade ginger liqueur for his Thai Ginger Lime Cooler. In short, we like the way this guy operates. See his profile and fan him here.

Here is Michael's profile Q&A:

@Amanda and Merrill: I'm thrilled to be featured here. Thanks! food52 continues to inspire me.

@AntoniaJames: Thanks!...and sorry about the broken link. The shortened URL must have expired. Here's a direct link:

That's a sort of recipe-schema for making liqueurs. Ginger is one of the easiest.

I'm embarrassed to say that I haven't updated that blog since (gasp!) August, but I'm now inspired to get back to it.

@lastnightsdinner: I feel the same way! So much good stuff!

Michael, your Thai Ginger Lime Cooler looks divine . . . but the link to the homemade ginger liqueur recipe appears to be broken. I'm getting a Tiny URL error message. Would you be so kind as to post the recipe here? Thank you!
