Just Kids: 3 Gorgeous Recipes We Love

Each week, we bring you three gorgeous recipes we love from around the web. Today, we're filled with delight over finding our favorite childhood treats recreated in exciting new ways — on a cracker, in a pop, or simply as a delicate coconut treat. 

Joy Deangdeelert Cho, of Oh, Joy!, did justice to a Valentine's Day gift of Whimsy&Spice's rose vanilla marshmallows by folding them into a graham cracker with a coconut 'mallow and a square of crisped rice bar from Charles Chocolates. She named it a Neopolitan S'more, and describes it as a "pink, white, and chocolate extraganza for your tastebuds." No campefire required!

She also blew us away with her delicately shaped take on classic coconut rochers. They're surprisingly simple to make, but their elegant appearance might have guests thinking you were sculpting for hours. Plus, they're perfect for dipping in dark chocolate. Très chic!

When Jenny and Teri of SpoonForkBacon whipped up these Peanut Butter and Jelly Pie Sticks, they must've known they were tapping directly into our dreams. Made with a cream cheese crust and a just-sweet-enough center of peanut butter, cream, and blackberry jam, these cute little guys turn pie into one of our favorite things: finger food!
