Budget Vacuum Sealing

For those of us living in tiny apartments, on limited budgets, or without want of a heavy vacuum sealer, our friends at The Kitchn have a great alternative for preserving food. The theory behind vacuum sealers is simple: remove all air to prevent the effects of oxidation. Vacuum sealing makes food last longer, and it has the added benefit of taking up less space in the freezer.

Their budget method involves two things that nearly eveyr kitchen has - a plastic bag and a straw. Simply zip up most of the bag, leaving a corner open with the straw in it. Suck out all the air, pull out the straw, and quickly seal the bag. It is as easy as that.

I love nothing more than a summer tomato (maybe add some balsamic, basil, and home-made mozz). In my free-time, I cook, read about cooking, farm, read about farming, and eat. Food is a basic necessity, but good food ought to be a fundamental right.
