It turns out that "knee high by the fourth of July" is lie. I consulted my favorite farmer at the local market and she said it's mostly just a clever rhyme with little grounding in fact. Corn is everywhere, and has been for a couple weeks now. If you are lucky enough to live in an area with local farms, head to your market or farmstand today to get some of the sweetest of the season - and the best part? It is usually pretty cheap. 

After four straight meals with corn on the cob as my vegetable, I figured it was time to change it up -- and the bright minds at Mother Nature Network had me covered, with 5 recipes for summer corn. Corn salad, bruschetta (with lobster!!), and even ice cream serve to spice up this summer favorite.
