Formaggio Night

Last Friday was Parmigiano-Reggiano night in Italy (our invite must have been lost in the mail). The first national celebration of its kind, the event was a push to revitalize the Parma region's prize cheese, and we're all for it -- especially since they shared an excellent recipe for Risotto Cacio e Pepe with the rest of the world. Buon appetito!
