Passover means lots of rules: no leavening, no flour, and, for those who keep kosher, no mixing milk and meat. Luckily, we still have sugar, eggs, and fruit to do the work for us. Instead of the chalky, dense, packaged Passover desserts, bake your own this year. Since you can serve these after meat meals as well as dairy, your seder-mates will thank you -- and you'll have a sweet-filled house all week long.

You guys, I spent all week checking this site for new Passover ideas. But now I'm done planning, Seder is tomorrow. Lovely ideas here for next year.

Last year I made a Passover Chocolate Orange Mousse Torte (http://flamingomusings.com/2012/04/passover-chocolate-orange-mousse-torte.html), partially inspired by Herve This' genius chocolate mousse from Food 52 (http://food52.com/blog/2932-herve-this-chocolate-mousse). If you use kosher for Passover chocolate, you don't have to worry about dairy content.

Vanilla extract can also be a no-no, depending on the alcohol it's made in.

Really? Are extracts made out of grains (e.g.: vodka) not OK? What kinds of alcohol are OK? (I'm not Jewish, but I'd like to avoid forbidden foods for my friends who are observant.)

If it's made out of potato vodka (aka homemade and you did it that way by chance/design), though the rule is that you can't have anything fermented so I don't know where that leaves things. You can buy kosher for passover extract. It all depends, of course, on how observant your friends are; I'd ask before you make yourself crazy. My husband is more observant than I am so I just follow his lead. His family allows Potato Vodka (Chopin) but others may not feel the same way.
