13 Virtuous Vegetable Soups

January 14, 2015

It's January, and we're thinking you have vegetables on the mind. And while we love a good kale salad or virtuous slaw or pile of roasted vegetables, sometimes we need our vegetables in bowl-form, piping hot, and eaten, curled up, with a spoon. Here are 13 soups we loved last year and are perfect for the season ahead -- ones to make a big batch of, to eat three bowls of, to store in the freezer, and to bring to work.
