There is a great series of lessons in the Beginner Basics section of HipPressureCooking: http://www.hippressurecooking.com/learn-to-pressure-cook/ . Each lesson has a recipe which teaches a different pressure cooking technique. Lesson 6, pressure cooker stock, is one I use over and over, and taught me how much more flavor things have when made in the pressure cooker. While there, look around rest of the site for lots more recipes and other useful pressure cooking information.

What lb pressure for the cheesecake? I use non - digital, traditional pressure cooker with 5, 10, or 15 pressure setting on the round thing with the holes. Love my pressure cooker!

I have been making roast beef in my pressure cooker for years, just like my mom did! Brown the roast on all sides, add about two-three cups water, a package of dry onion soup mix, and a bay leaf. Once under pressure cook for 30 to 45 min., depending on size of the roast.

I make beef short ribs in red wine and mushrooms fairly often and chicken cacciatore. Love having fork tender short ribs in 20 mins.

I also love my pressure cooker, which I got as a birthday gift last year. It's the only way I can successfully make risotto and it's also great for beans. I've also made this Provençal pork stew (http://notwithoutsalt.com/2013/02/02/pressure-cooking-french-pork-stew-with-white-beans/). Mark Bitman on the NYT recently had a recipe for pressure cooker meatballs.

I love my pressure cooker for beans (including the soaking!)in about 15 minutes. Put beans and water in the cooker, bring to pressure and cook for 2 minutes. That is the soaking. Then add seasoning (you can change the water or not) and cook at pressure for the requisite time for the particular bean (eg 7 minutes for black beans). Voila!

That's very similar to Lorna Sass' beans technique, but she says to toss the cooking water and rinse off the beans after the first pressure cooking round (2 minutes). Apparently, the first couple of minutes of pressure cooking draws out a lot of the oligosaccharides (the non-digestible carbohydrates which can cause gastrointestinal discomfort and gas) out into the cooking liquid, and if you discard it, you get rid of a good portion of them as well.
