What can I do with dried out, but not totally dried, chanterelles? I have about 1 pound.

Sounds like soup!

Very true Susan g.
I made this excellent food 52 mushroom soup with dried chanterelles. Using the soaking water in the broth and chopping up hard stem bits to simmer in the broth.

Very rich.
Submitter could also dry out 1/2 of them in the oven---set the oven on 200 turn off and dry them out a few hours for long term storage.

You might find some advice in this video about how to reconstitute dried mushrooms!

I'd use them in something that has moisture, like risotto or a stew.
