I always Serve a prime rib roasted root vegs and Brussel sprouts with bacon. A bread pudding made with pumpkin bread and your set. Vegs can cook while roast rests then put in bread pudding after vegs and enjoy hot from the oven.

Beef tenderloin is so easy. Add green beans sauteed with cherry tomatoes and thyme for holiday color. I always start with cream of broccoli soup which make ahead. Salad of spring greens with raspberries to end with more holiday color.
