I will second (third? fourth?) Plenty--I forgot about it. I also really like Crescent Dragonwagon's Passionate Vegetarian. it is especially interesting because although she is vegetarian, she spent many years cooking meat in her restaurant, which I think gives her an interesting perspective. Kind of similar to Plenty actually, as Ottolenghi eats meat I believe.

Yottam Ottolenghi's book "Plenty" is one of the best veggie cookbooks to come out this year. It is brilliant.

I also recommend ottolenghis Plenty. Interesting flavours, nice pictures (which always helps for me!). I'm not a vegetarian, and none of the recipes make me think... Well, that would be nice with a slab of steak on the side... They're dishes in their own right.

American Wholefoods Cuisine, by Nikki and David Goldbeck, is an extensive resource for healthy vegetarian cooking -- a 'Joy" reborn. Recipes are simple to prepare and they work! Some of my favorites are there.
I've been veg for 35 years, but most of my ~ 400 cookbooks are written for omnivores. So many recipes need no alteration, and many can be adapted, sources of techniques, sauces, etc. Vegan? Just another source of great recipes and ideas -- Nava Atlas is my favorite.
Online, Nava Atlas has www.vegkitchen.com; see who else she recommends. Lately, I get most of my new ideas from FOOD52. Use the search box with the word 'vegetarian' along with whatever you want to find and many many options will come up.

Pleasantly surprised by Vegan with a Vengeance and Veganomicon. Not vegetarian but want to be vegan temporarily b/o so bilious from holiday excess (no regrets). Also like Monsoon Diary, a memoir with Indian vegetarian recipes. Vietnamese cookbooks usually have a substantial vegetarian grouping of recipes because of Hindu traditions in Vietnam. And Vietnamese cooking is so light and fragrant and vegetable-y... Andrea Nguyen's web site and books are wonderful ...

Plenty is a fantastic cookbook. If you want a more encyclopedic cook book, you might like Mark Bittman's How to Cook Everything Vegetarian. ALice Waters has Chez Panisse Vegetables and Deborah Madison has Vegetarian Cooking for Everyone. As far as blogs, 101 Cookbooks and Sprouted Kitchen come to mind. Heidi Swanson of Sprouted Kitchen also has cookbooks folks adore.

I also think there may have been a thread of this nature previously that you might find helpful.

I am also a flexitarian. I love the Moosewood books.
