Oh my! Duck fat is so delicious for so many things! You can fry potatoes, eggs, just about anything, in it. And of course, it's essential for duck confit and rillettes.

Freeze it and make duck confit with duck legs. I hoard every drop for exactly this purpose.

Make gravy. Fry latkes. Use it for the roux in a gumbo. Roast anything. Make confit later on. Use it for the fat really in any savory recipe - that stuff is liquid gold! (solid gold once it cools down!)

Roast potatoes in it! They're delicious that way :) Duck fat also makes delicious french fries and fried chicken - Melissa Clark has a recipe for the latter.
