put it in a microwave-safe bowl, cover tightly with plastic wrap, nuke at 60-second intervals until wilted and steamed. season any number of ways: a drizzle of soy sauce and a couple of drops of sesame oil work great.

or sauté in olive oil on high heat. that's super fast, too. season with salt, pepper, a squeeze of lemon juice, and a sprinkle of chile flakes.

Not sure of the application....but a Japanese technique of making a rolled Spinach; Ohitashi (think like a sushi roll, rolled on a matt). Or the Salad, gomae; is to bundle up the spinach by the stems, so you have a 'handle" and quickly swirl them in boiling water. Then shake and trim off the stems.
These are dressed with a toasted and ground sesame seed dressing. Think a ginger, seaseme dressing you'd get at Japanese steak house for a salad, or the type of peanut tasting dressing used on Noodles.
Lots of variations for that dressing on the web.
