Does champagne age like wine or go bad like beer? How long can you keep an uncorked bottle??

It all depends on how it's stored.

However for opened Champagne. Which we have a few glasses of for NYE and Mimosa's for brunch.
A 1/4 bottle with a loose paper towel in the neck to keep out bugs; and place under the counter in a dark place.
6 months latter you'll have a nice vinegar.
