You can treat the jerusalem artichoke the same as a potato. Wash and dry, then toss with EVO, salt, pepper. Roast on a sheet pan in a 350/400 oven until fork tender. Reseason and serve.
rutabagas are closer to a turnip in taste but more bland
the j artichokes have a distinct flavour
both can be a similar consistency,and not very appetizing if over cooked
