You can, but depending on how much you have cooked them, they will turn to mush when u defrost them, but if you cooked them quickly and they are still slightly crisp, then you are in the clear.

If you mean to prevent them from rotting in the fridge and to preserve them for some future use, sure. Downside, though, is that the texture will change markedly, as the peppers will become soft and squishy and probably ooze some liquid upon subsequent defrosting.
