I have a question about the recipe "Shaun Hergatt's Southern Style Brisket" from Family Meal. Shouldn't the brisket be covered?

Because the brisket is cooking at quite a low temperature, it's not likely to dry out or burn. If you notice your brisket getting too dark in color, it won't hurt to cover it with foil.
