Depends on whether it's an entree or an appetizer, what else you're serving, people's appetites.....
Personally, I'd figure 4 or 5, as an entree in a meal with other courses, 6 to 8 as an appetizer or finger food. That might give leftovers, but shrimp have a way of disappearing faster than you think. And leftover shrimp isn't a bad problem to have.
