What does it meantime "salt cabbage" during recipe prep? I don't understand what you want re/"tagging", so vegetarian.

Tags are words for a category that fits your question, which would help someone find the answers later by using words like that in the search (upper right). You might say "salting cabbage" or "salting vegetables."
Salting is sprinkling salt over a food. It helps draw out excess water before you continue the recipe. You'll also find it with sliced cucumbers, so they are crisp rather than soggy in a dressing or marinade.

I concur with Christine. One particular purpose is to prevent cole slaw from becoming watery -- not necessary if you're going to serve it immediately.

Generously salt the cabbage and drain in a colander for 3 hours. Rinse thoroughly and dry.

Since I can't see the recipe, I can't say for sure, but sometimes I salt shredded raw cabbage and allow it to sit in a colander to remove some of the liquid from the cabbage and let it wilt a little. If you post a link to the recipe, we could answer more specifically.
