Curry.
Lazy me, I just fiddle with the recipe on the side of the jar of curry paste (red, green or yellow, depending on the available vegetables). A can of coconut milk is handy.

Maybe substitute leftover chicken for tuna in a casserole like this?

This corn chowder is always a hit with me: goo.gl/N0l15
It's also a great topping for pizza, or filling for enchiladas.

I like to cut roasted chicken into bite sized pieces, throw it in a pan with a little oil and sprinkle on some chile (or whatever you prefer), and then make tacos topped with lettuce, fresh cilantro and a little lime juice. Tasty and very simple!

Here's a recent thread about what to do with rotisserie chicken that might be helpful: http://www.food52.com/hotline/12148-i-ve-got-1-2-a-rotisserie-chicken-in-the-fridge-dinner-ideas

Here is a favorite recipe of mine that calls for pre-roasted chicken. http://food52.com/recipes/13566_green_chili_chicken_posole_soup

I always make an open faced chicken sandwich with leftover chicken. Little gravy, chicken, cranberry sauce over some toast. If you don't have that a little mayo and cold chicken on a sandwich of toasted bread.
