Can I freeze fresh sugar snap peas?

I came into an abundance of fresh sugar snap peas that I'll never be able to eat before they spoil. Can I freeze them? Should I blanch them briefly first?

They really don't freeze very well (unlike regular peas, which do). They lose their "snap." We grow them, but only eat them in season. I wish they did freeze well!

I ate a whole bowl of them raw last night with taziki and hummus, and made them for dinner tonight - so yummy! But they will need to be frozen or used by Tuesday.

So tonight for a change, lightly blanch, then eat with good-ol-Lipton's Onion Soup Dip. (We make with plain yogurt) The saltiness plays off the sweetness of the peas.

My instinct would be to blanch them first.

I wonder if you could pickle some?

YES ! You absolutely can pickle them. I just did a batch a couple of days ago. I got the recipe I used somewhere on line...
