hard cooked eggs

I believe I read some tips re preparing the perfect hard cooked egg on the Food52 site, but cannot locate. Also believe there were tips re peeling hard cooked eggs. Can anyone help?

The fresher the egg, the harder it is to peel. Week old eggs are best (and supermarket eggs fit that definition).

There were varying tips of making great hard boiled eggs and what seemed to work for most people was:
1. Cover eggs in cold water, put and stove and bring to boil. (Make sure the eggs have plenty of room, don't overcrowd.)
2. Take pan with eggs off burner and let set for 18 - 20 minutes
3. Plunge eggs into cold water until they cool and then peel.

I do this all the time with great success. Hope this helps.
