I have a question about the recipe "Perfect Baked Greens" from MeghanVK. I don't have any spinach, but I do have beet greens and kale. Would that work?

Absolutely - any hardy green (collards, chard, kale, etc) in any combination/quantity benefits from this kind of treatment.

beet greens are texturally similar to spinach, and taste a bit like chard. It should work.
