1 cup of flour, 1 cup of milk or buttermilk, 1 large egg, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 2 teaspoons of sugar, 1 tablespoon of butter melted. Whisk all the ingredient together as briefly as possible. Dont over mix or they will be tough. Place a nonstick saute pan over medium high heat. Get it hot. Add a little butter and swirl it around to coat the bottom of the pan. When it stops bubbling pour about 1/2 cup of batter into the pan. When the pancake is bubbling in the middle of the uncooked side it is ready to flip. Flip and cook the other side until the pancake is cooked through. You may need to adjust the heat if the cakes are browning to quickly. You can mix half all purpose flour and half fine grind whole wheat if you want.
