I have a question about the ingredient "plain, raw, untreated white rice" on the recipe "Julia Child's Tian de Courgettes au Riz (Zucchini Tian)" from Genius Recipes. What is "untreated" rice?

...and not "converted" like Uncle Ben's. Probably not 'enriched' either -- a fallacy, of course.

Guessing (hopefully someone else knows for sure): "regular" rice, not stuff that's been treated to quick cook (like minute rice).
