What to do with leftover chicken breast

Chicken salad, chicken banh mi, tortilla soup, tacos, enchiladas, ramen/soba stir fry, anything you can think of that uses chicken can probably be short-cutted by using leftovers. Just don't submit it to high or long-term heat (i.e., no regrilling or baking or simmering for hours).

Quick chili verde is another good one. Posole. Toss it into a marinara sauce....as chunks or shreds use it on pasta, if it's still the whole breasts, reheat gently in the marinara sauce, top with mozzarella and Parmesean and call it chicken Parmegiana.

Shred it. Then you can:

Warm it with taco spices for chicken tacos.
Use it for BBQ Chicken Pizza, or any kind of pizza
Chicken Noodle Soup
Chicken Tortilla Soup (short cut: shredded chicken, chicken broth and salsa. Simmer together, top with cheese and tortilla chips!)

Last night we used left over chicken to make pho, WinneAB has a recipe here that uses turkey. http://www.food52.com/recipes/1919_turkey_pho For mine I used 1 quart of chicken stock with the spices (not the bones and cut the fish sauce in half) listed here and it was very good. http://www.food52.com/recipes/1328_viet_hapa_pho You could also make enchiladas or add it to a Cobb salad.
