Yes for your own consumption at a later time ala leftovers, but not for guests. The best way to freeze it for later is to blanch the carrots, then prepare the sauce, chill the sauce, combine with carrots, (leave out the cilantro,) then freeze. Thaw in the refrigerator over night, then complete the carrot + sauce simmering step just prior to serving.
