Uzbek osh/pilau recipe?

I recently moved away from my Uzbek friend and I really miss their national dish, osh. Does anyone have a good recipe for it? Thanks!

Note that multiple commenters have noted that the most traditional way to cut the carrots is julienne, not grated.
