I'm making this now but noticing there recipe doesn't call for any salt at all?

There's a ton of salt in ketchup. There's also salt in hot sauce.

As a general rule, cooked dishes should be used within 4 days and reheated to 165F. Pulled pork freezes perfectly so that's another option.

I haven't made this particular recipe, but I regularly make pulled pork (Steve Reichlen's recipe) 3-4 days in advance of parties. Reheat in a low oven covered and the results are always great.
