I have a question about the recipe "Juniper Earl Grey Curing Mix" from rkuo. 56 ounces cures how many salmon filets? Just one?
Where I work we use 2-3 cups of our lox cure per whole side of salmon. You only need 1/4-1/2 in layer of salt on the flesh and a dusting on the skin.
