What to serve alongside lentils?

I'd like to make French lentils for dinner tonight, to be served with leftover Easter ham and Dijon-vinaigretted salad. But it feels like there's something missing. Suggestions?

Are you making the Patricia Wells' Genius lentil salad? I've got some lentils cooking for that right now! I'd roast some carrots with thyme to serve alongside this, for their bright color, different texture, and light herb notes. And so easy. ;o)

Ha, not on purpose, but actually, yes! (With the addition of thyme.) I also sautéed some leeks, and made a Dijon-shallot vinaigrette for green salad. I'm going to serve that with squid in olive oil. Should be a good dinner :)

What about leeks? I love leeks and lentils!! This dish is simple, yummy and incorporates Dijon which would resonate nicely with your salad...
