I have a question about the recipe "Best Boston Cream Pie" from Joanne Chang. Do you use 7 egg whites in this recipe, or 3?
3 egg whites, but 7 eggs total.
I'm not sure if this is correct, but I ended up using 7 egg whites and it worked great.
I read it as 4 egg yolks and 7 egg whites.
correct! 4 egg yolks and 7 egg whites (so 4 whole eggs and 3 addl whites)
