Our kids are doing a shrimp boil for father's day, and asked me to bring a vegetable side dish. Any suggestions?

I'm looking for something that I can throw together in under an hour and serve warm or room temperature. There are 6 adults and 2 children (who probably won't eat it), and one of the adults avoids gluten.

It is, and the nut haters don't have to eat the almonds, and the oil avoiders can have the roast broccoli and sweet onions plain without the yummy dressing.

Thanks, ATG. All really great recipes; none of which my husband will eat. (Feta cheese, mustard, yogurt, may and anchovies are all no-go for him. Sigh.)

I do, pierino--thanks! They are boiling corn with the shrimp, so they don't want another corn dish.

What kind of veggies do you have on hand? Potato, onions, garlic, carrot, zucchini, eggplant? You could simple chop them and roast in the oven for 30 min with olive oil, balsamic vinegar and sea salt. Gorgeous, simple & delicious. Add some fresh herbs after you transfer to serving dish. You could also do a simple sauté of zucchini & sliced almonds (takes 5 min) Or bring a side salad. Good luck! Let us know what you made...

How about a cold rice salad with various veggies? Recipes abound online, but a fine cook like you can easily improvise.
