A question about a recipe: Corn Salad with Cilantro & Caramelized Onions

Fbd604e3 90e0 4ea7 a8c7 96fc0ec02ca9 080911 101

I have a question about the recipe "Corn Salad with Cilantro & Caramelized Onions" from Ms. T. Are there any decent pork-free substitutes for pancetta?

I think schmaltz would work here or duck fat.

How about some smoked turkey?

Depends on why you're avoiding pancetta. If you don't want pork some of the above ideas would work. If you're avoiding meat entirely, I might try some smoked paprika, Aleppo pepper or pimento d'espelette for a smoky touch and some crisped onions or shallots for crunch.
