A question about a recipe: Serrano Ham and Manchego Croquetas with Smoked Pimentón Aioli

I have a question about the recipe "Serrano Ham and Manchego Croquetas with Smoked Pimentón Aioli" from Sonali aka the Foodie Physician. What temperature should I have my oil for frying the croquetas? The recipe simply states "over medium heat" but that could be a wide range depending on the stove. Thanks!

Most advice about deep-frying is for the temp to be somewhere between 350-375F.

Yes, 375F measured by a candy thermometer is a very good benchmark for something like croquettas which should be fairly crisp after their dunk in screaming hot oil. Use an oil with a high smoke point, e.g. canola, grapeseed etc.
