How do I keep my falafel from dissolving in the oil? Same with dried and canned.

No matter what recipe I have used, including the one from the Jerusalem cookbook, my falafel always dissolves in the oil. Followed to the letter including using a thermometer for the oil. No different with dried or canned.

Agree with Monita - not just the fridge, either - freezing them for half an hour first will really help.

I assume you chilled the batter before making the balls. I would try chilling again after you make the balls before frying them
