In my opinion it is better if you canned it in jars and conserve making the vacuum in bain marie.

Ick! Okay, I will be the dissenting voice---with all respect to previous comments. Ratatouille is summer drifting into fall. If it's frozen it's ruined. It becomes the cartoon chef version.

Yes yes yes. U can freeze it and fully cooked.

I would cook the ratatoullie to about 3/4 done. That way when you re-heat it it will not be overly mushy.

I used to even buy it frozen in France :-).
