Cooking a 6 pound beef brisket in the oven at 275 for 6 hours. Will be covered with foil, but not sure if I should have fatty side up or down

fat side should go up so that the meat will self baste.

Exactly. I agree with R. Whenever I'm cooking meat by whatever method, oven or grill, the fat is on top.
