I have a question about the recipe "Short Rib Ragu" from Minimally Invasive. Is this worth attempting for someone who is allergic to mushrooms? Is there a decent substitute, or should I pick another recipe?

Leave the mushrooms out. It will be fine.
There is plenty umami with the whorstershire sauce and the anchovies...skip the mushrooms.
