I have a question about the recipe "Pastrami" from Michael Anthony. I was planning on making Pastrami for a Christmas gift. Unforunately, the recipient is gluten free. Is the Shiro Dashi essential? If so, any recomendations for a replacement?

Hi! The shiro dashi isn't necessary -- it gives it a nice smoky flavor, but without it it is still delicious!!
