The main thing you want to look for is conductivity. Cast iron is good for that. You might also want to purchase a "flame tamer"---they are cheap. I own a lot of pans. All-Clad is really good. I just picked up a pair of Zwilling-Wushtof ceramic lined non-stick pans and I am really happy with those.
