Can I freeze dough made with Kashkaval cheese that was thawed? (the cheese was thawed, not the dough)

Can you try it first with a portion of the dough and bake it off the next day? I have frozen and defrosted and frozen other cheeses when making things like spanakopita and lasagna and they were fine but never with Kashkaval or in dough . . .
