A question about a recipe: Breton Butter Cake

I have a question about the recipe "Breton Butter Cake" from thirschfeld. About the delicious-looking Breton Butter Cake: if using regular (i.e. not gluten-free) flour, would you suggest using 600 or 475 grams (that was called for in the original recipe, as mentioned in the introductory description)?

If you're using regular all-purpose flour, I would suggest going with the 475 grams that the original recipe calls for.
