A question about a recipe: Fruit-Laden, Whole-Grain Pancakes

I have a question about the recipe "Fruit-Laden, Whole-Grain Pancakes" from Nicholas. I want to make these pancakes for one adult and two toddlers, but I only have one egg. Should I halve the recipe or sub something for the egg? If so, what? Thanks!

Halve the recipe. The full recipe serves 4-5, so with 1 adult and 2 toddlers, half of the recipe should be enough for all of you.
