how would you change this recipe for white meat? Would you cut bone-in breasts into small pieces? Take out bone?

I haven't made this recipe but I would leave the breast whole and cook it per the instruction. However, you probably want to reduce the cooking time by a bit - white meat tend to cook faster than dark meat, although this depends on thickness of the breast as well. You can take out the bone if you'd like, it won't make a difference in the cooking time.

Whatever you do, don't cut the breast into small pieces - it'll be prone to drying out. I hope that helps.
