I buy organic bananas all the time . They last much longer. They usually come with their stems wrapped to slow down the ripening process.

Many people confuse plantains with bananas, some of the differences are noted above. Although they look a lot like green bananas and are a close relative, plantains are very different. They are starchy, not sweet, and they are used as a vegetable in many recipes, especially in Latin America and Africa. Plantains are sold in the fresh produce section of the supermarket, they usually resemble green bananas; ripe plantains may be black in color. Plantains are longer than bananas and they have thicker skins. They also have natural brown spots and rough areas.

I don't know if this is the case, but in CA our organic bananas come with a plastic wrapping on the stems. If this is the case the ripening is slowed down substantially. If you remove this, they should ripen up no problem.

Non-organic bananas are sprayed with synthetically made ethylene gas to make them ripen more quickly. Organic bananas are not sprayed but release natural ethylene gas themselves as part of the ripening process. If you buy them too green they may never ripen. Put in a plastic bag the bananas ripen more quickly, enveloped in the gases they release. Hope this helps.

You might not have purchased "bananas" in a few days if they don't turn yellow. What you have there is "Plantains"
They look like bananas..But are normally green.
How to use them. You peel and slice and pound the slices a bit, flour salt pepper..and fry them. Basically think of them as a potato. A very gummy tasting potato.

If in three or four days..they turn yellow..you have Banana!
(you could put them in a paper bag to speed up the process if you wish)

Green bananas aren't fully ripe yet and may not taste the way you expect bananas to taste.
