How much salmon & steak do I buy for 7 people?

It also depends on the constellation of dishes you're serving - a buffet, with lots of sides, salads, etc.? A plated meal, with fewer distractions? Either way, both salmon and steak make good leftovers - cold in salads, on sandwiches, salmon cakes or chowder - so I tend to err on the high side. I always worry "what if everyone wants salmon (or vice versa.)"

Much depends upon whom you are feeding. If your guests include teenagers, many of them have bottomless pits and can/will eat as much as you present. If it's ladies watching their weight, about 3 ounces of each per person will be more than enough. Is this a buffet presentation? then you'll need more because there's no guarantee of what your guests will choose. Most of us in US serve and eat way too much protein. If you figure 6 ounces is a generous serving per person (it really is!) multiply that by the number of guests and then buy half steak and half salmon.

If you want everyone to have a little of each, 3-3.5 lbs of each should be ample. If you want people to choose which they'd like and have enough for everyone to get their chosen item you should get more and expect leftovers.
